MIZRAGHASSEMI (persisch) Rezept Dukan Diät Low Carb

2 mittelgroße Melanzani
1 Zwiebel
3 Knoblauchzehen
3 Fleischtomaten
1 EL Tomatenmark
1/2 EL Kurkuma
2 Eier
Salz
Pfeffer
etwas Olivenöl

Melanzani rundherum ein paar mal einstechen, dann im Rohr bei 200°C 40 Minuten backen.
Haut abziehen, Fruchtfleisch klein schneiden.
Feingehackte Zwiebel und Knoblauch in wenig Olivenöl anschwitzen.
Tomatenwürfel dazugeben, 10 Minuten köcheln lassen.
Eier versprudeln, in die Masse rühren.
Kurkuma und Tomatenmark einrühren, Melanzani unterheben, salzen und pfeffern
